Shopping List

Exactly what to grab at the store — whole units, no guessing at "half an onion."

  • 1.5 lb sirloin steak
  • 6 tbsp butter
  • 1 head garlic
  • Fresh rosemary/thyme
  • 2 lb potatoes
  • 1/2 cup milk, butter for mash
  • 1 lb green beans
  • Salt, pepper
  • Garlic bread, side

How to Make It

  1. Boil potatoes until fork-tender, about 15 minutes; drain and mash with butter and milk.
  2. Pat steak cubes dry, season with salt and pepper.
  3. Sear steak in a very hot skillet in batches (don't crowd the pan), 2–3 minutes, until browned on all sides; remove.
  4. Lower heat, melt butter with garlic and herbs, then toss steak bites back in to coat.
  5. Serve steak bites over mashed potatoes with green beans on the side.
  6. Serve with garlic bread on the side.

No-Time-For-That Tip: Searing in batches feels slower but it's not — an overcrowded pan steams the meat gray instead of browning it.
